Bolognese Burger

Zinfandel

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients:

Burger Patties:
4 ounces Italian Sausage
4 ounces pancetta
1.5 pounds ground beef
3/4 cup mirepoux(1/4 cup each carrots, celery, onion finely chopped)
1/4 cup mushrooms, chopped
2 cloves garlic, chopped
3 tablespoons sun dried tomato paste
1/2 cup parmesan cheese, grated
1 tablespoon oregano
6 slices mozzarella cheese
6 slices ripe red tomato
Sauce:
1/2 cup mayonaise
1 tablespoon sun dried tomato paste
Buns:
6 hamburger buns

Instructions:

Place ground beef in large mixing bowl. Using a food processor, finely grind Italian sausage and pancetta. Add ground meat mixture to ground beef. Add mireoux, chopped mushrooms, garlic, sundried tomato paste, parmesan and oregano. Mix well and form 6 equal patties. Grill 5 minutes on each side, turning once. Top each patty with a slice of mozzarella cheese just before removing from the grill, let melt slightly. Mix together mayonaise and sundried tomato paste. Spread bottom bun with mayo mixture, place burger on bun, add slice of tomato to the top of the burger, add top bun and enjoy.
