Blue Mountain Burger

Complex in taste this burger brims with cafe style. The ingredients in the hamburger have a subtle flavor which does not over power the beefy taste of the ground sirloin. A dry rub of spiced ground coffee beans wakes up beef burger and gives it a slightly crunchy blend of flavors and textures. Bittersweet coffee, sweet brown sugar, spicy paprika, and earthy sage crust makes for a great burger


Hamburger Patty
1 lbs Ground Chuck
1 lbs ground sirloin
6 egg Yolks
2 tablespoons steak sauce
1 small red onion minced
1/4 lbs bacon minced
4 tablespoons butter
Spice Rub
1/4 cup finely ground Blue Mountain coffee beans
1/4 cup brown sugar, 
2 tablespoons chili powder
2 tablespoons smoked paprika
1 teaspoons ground sage
1 teaspoon onion powder
1/4 teaspoon cayenne


Combine hamburger patty ingredients. Form patties placing a ½ tablespoon butter in center of patties In a small bowl, combine spice rub ingredients. Rub meat generously with the spice mixture. Let meat stand for 15 minutes and repeat rub. Grill over medium heat until medium/ medium well (160°F - 165°F). Add a small amount of gorgonzola crumbles (optional) to finish.
