BLT Burger on Texas Toast with Jalapeno Mayonnaise

Ingredients

Jalapeno Mayonnaise
1 jalapeno, seeded and diced
3 cups of good quality mayonnaise
Juice from 1 lime
Patties
1 1/2 pound ground sirloin
1/2 pound peppercorn bacon, cut into fourths and sliced julienne style length wise
3 tablespoons Worcestershire sauce
3 tablespoons low-sodium soy sauce
Vegetable oil, for brushing on the grill rack
6 thick pieces of Iceberg lettuce
6 (1/4-inch thick) large tomato slices
12 slices of Texas Toast bread

 

Instructions

Directions To make the jalapeno mayonnaise, combine the jalapeno, mayonnaise and lime juice. Mix well to combine and refrigerate until serving. Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make the patties, combine the beef, Worcestershire, soy and bacon in a large bowl. Handling the meat as little as possible to avoid compacting it. Mix well making sure to divide bacon evenly throughout the beef. Divide thee mixture into 6 equal portions and form the portions into patties to fit the Texas Toast. Brush the grill rack with oil. Place the patties on the rack, cover and cook, turning once, until done to preference about 8 minutes on each side for medium. During the last few minutes of cooking, carefully place Texas Toast, on the outer edges of the rack, turning once to toast lightly. To assemble burgers, place a generous amount of the jalapeno mayonnaise on each slice of Texas Toast. On 6 of the slices of Toast place a pattie, Iceberg lettuce and tomato. Top each with another slice of Texas Toast and serve. Makes 6 burgers. Kimberly,  Parker, Colorado
