Blackened Burgers with Peanut Butter, Apples & Bacon

Ingredients

Chicken Burger ingredients:
2 ½ lbs. ground chicken breast
4 Tablespoons soy sauce
4 Tablespoons dry sherry
1 egg, slightly beaten
1 ½ cups plain bread crumbs
¼ teaspoon dried pepper flakes
1 teaspoon Tabasco sauce

Blackened mixture:
¼ cup black sesame seeds
¼ cup sesame seeds
1 teaspoon course grind black pepper
1 teaspoon kosher salt

2 green apples peeled, cored, and thinly sliced
2 Tablespoons lemon juice

6 Kaiser Buns (or burger buns)
6 slices mild cheddar cheese

Peanut butter mixture:
1 cup Jiff extra crunchy peanut butter
1 Tablespoon honey
4 Tablespoons minced cilantro
¼ teaspoon hot red peppers (optional)
3 teaspoons soy sauce

6 slices cooked bacon crumbled

 

Instructions

Wipe grill with a vegetable oil and heat to medium.

Place paper towels on a microwavable plate, put bacon on and cook until crisp. Remove and set aside.

In a shallow dish whisk together all the ingredients for blackened mixture and set aside.
In a large bowl combine the ingredients for burgers mix well. Shape the mixture into 6 round patties Coat the burgers on one side with the blackened mixture, pressing firmly to make sure the mixture stays on the burger.
Grill burgers over medium heat for 10 to 15 minutes or until the meat is no longer pink, turning once. When burgers are almost done place the cheese on each burger and place the buns, flat side down on grill until golden brown.

While burgers are grilling make the peanut butter mixture.
In a small heavy saucepan, place all the ingredients for the peanut butter mixture over medium heat stirring constantly to blend well.

Arrange Kaiser buns on 6 plates; spread peanut butter mixture evenly on flat side of buns, place crumbled bacon on, then burgers on buns, and close sandwich.

Takes 35 minutes to make.
