Bar BQ Slawburger

Pairs well with:

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

Ingredients

For Caramelized Onions:
1 large Vidalia onion, sliced
1 tsp. Splenda
2 Tbsp. Colavita Extra Virgin Olive Oil
For Buttery Slaw:
4 Tbsp. mayonnaise
4 cups  Classic slaw
2 tsp. sugar
2 tsp. vinegar
1 small ripe avocado (peeled, pitted, and mashed about 1/2 cups) For Pepper Patties:
2 pounds ground chuck
1 Tbsp. Colavita Extra Virgin Olive Oil
2 Tbsp. Sutter Home White Merlot
2 Tbsp. Fajita seasoning
2 Tbsp. chopped fresh jalapeno with seeds and ribs removed
Other Items needed:
Colavita Extra Virgin Olive Oil for brushing the grill rack
3 Tbsp. Bar BQ Sauce
Colavita Extra Virgin Olive Oil for brushing on buns
6 Earth Grains onion buns
6 Tbsp. Bar BQ Sauce

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. For the caramelized onions, separate the onion slices and place on a sheet of heacy aluminum foil about 2 feet long. Sprinkly the onions with splenda and Colavita Extra Virgin Olive Oil. Fold to close and cook for 30 min. on the cool side of the fire turning occasionally. Mix the mayonnaise, slaw, sugar, vinegar, and avocado to make the buttery slaw. The avocado gives the slaw a buttery taste and helps it hold together. Refrigerate until ready to use. To make the patties thoroughly mix the ground chuck, 1 tablespoonful of Colavita Extra Virgin Olive Oil, the Sutter Home White Merlot, the fajita seasoning and the jalapeno peppers but do not pack. Make 6 even patties a little bigger that the buns. The tablespoonful of olive oil helps the patty not dry out while grilling. Brush the grill rack with the Colavita Extra Virgin Olive Oil. Cook the patties on the grill five minutes on the first side when the coals are medium hot. Turn when lightly browned and spread 1 tablespoonful of Bar BQ sauce on the top of each patty. Cook the second side about 5 minutes until it is lightly browned also. Use Colavita Extra Virgin Olive Oil to brush the onion buns lightly on the cut sides and toast the buns on the grill. the olive oil will help prevent the buns from sticking and make them toast crisper. To complete the hamburgers, spread 1 tablespoonful fo Bar BQ sauce on the bottom bun then put on 4 or 5 rings of the caramelized onion. After the pepper patty has rested 2 min., place it on top of the caramelized onion. top the patty with 2/3 cups buttery slaw and then spread another tablespoonful of Bar BQ sauce on the toasted bun.
