Azteca Burrito Burgers with Grilled Pepper Guacamole

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

GRILLED PEPPER GUACAMOLE –
1 large sweet red pepper, sliced in quarters lengthwise, seeded
3 ripe Hass avocados
Juice of 1/2 lemon
-2 cloves garlic, finely chopped
-1/2 medium red onion, diced
-1 small tomato, diced
-1 teaspoon salt
BURGER PATTIES
-3 tablespoons sesame seeds
-1/2 cup almonds, finely chopped
-2 pounds ground chuck
-1 tablespoon chipotle powder
-1 tablespoon ground cumin
-3/4 cup raisins, finely chopped
-2 squares  dark chocolate, finely chopped (any other dark, bittersweet chocolate works as well)
-1/4 cup Sutter Home zinfandel
-1 teaspoon salt
-6 large flour tortillas
-Oil for basting grill

 

Instructions

Preheat grill to medium. Place red pepper sections skin side down over heat. Grill until skin begins to blister and is slightly charred. Remove from grill and set aside. Pit and skin the avocados. In a medium mixing bowl, add avocados and lemon juice and mash avocados with a fork. Once peppers have cooled, dice them and add them to avocado mixture. Add garlic, onion, tomato, and salt. Gently mix ingredients. Place in refridgerator. Heat grill to high. To make the patties, spread sesame seeds and almonds evenly onto small baking sheet and place on grill. Stirring frequently, toast until seeds and nuts are golden brown on all sides. Remove from grill and immediately place toasted almonds and sesame seeds into large mixing bowl. Allow to cool for a few minutes. To the toasted nut mix, add chuck, chipotle powder, cumin, raisins, chocolate, zinfandel, and salt. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mix into six equal portions and form portions into oblong patties that will fit the tortillas when rolled up. Lower heat on grill to medium. Brush the grill rack with oil and place patties on rack. Because the patties contain raisins and chocolate, place patties offset from fire to avoid burning. Cover and cook. Turn patties once in order to cook to preference, 5-7 minutes per side for medium. When patties are removed from grill, place tortillas onto grill. Toast them for 5-10 seconds per side. Do NOT overdo them as they will become dry and brittle. To assemble burgers, place one patty in the center of a tortilla. Top patty with 2 generous spoonfuls of guacamole and spread it until the patty is evenly covered. Fold tortilla around patty and serve.
