AVOCADO HUMMUS AND SPICY ACETO ONION BURGERS

Ingredients

Avocado Hummus & Spicy Aceto Onion Burgers
 Avocado Hummus:
4 tbsp “ Fage ” or other Greek style Yogurt
2 cloves garlic
¼ cup fresh lemon juice
1 can garbanzo beans ( chick peas )
½ cup sesame tahini
1TBSP kosher salt
2 tbsp Colavita extra virgin olive oil
1 california avocado, peeled and pitted
Spicy Aceto onions
4 tbsp Colavita extra virgin olive oil
2 large spanish Onions, sliced thin
2 cloves crushed fresh garlic
6 tbsp Colavita Balsamic vinegar
2 tbsp  spicy mustard
1 tsp cayenne pepper
HAMBURGER PATTIES
1 ½ lbs ground chuck
2 tbsp salt
1/2 tbsp black pepper
1 glove crushed fresh garlic
Vegetable oil for brushing the grill rack
6 Kaiser rolls, split
12 pieces of Red leaf lettuce.

 

Instructions

Directions: Preheat a gas grille to medium high. To make the Avocado Hummus, place the yogurt, garlic, lemon juice, garbanzo beans, tahini, salt, olive oil and avocado into a food processor. Blend well until a paste is formed. Transfer into a bowl and refrigerate until serving. To make the spicy aceto onions, place a skillet pan onto the grill rack and allow it to heat up. Place the olive oil and onions into the pan. Allow onions to become wet and translucent. Add the crushed garlic, vinegar, mustard and cayenne pepper. Mix well and sauté until onions are caramelized. Set skillet to the side of the grill rack, or to the warming rack above the main rack. To make the patties, combine the beef, salt, pepper and garlic and mix well. Form patties. Brush the grill rack with oil. Place patties onto the grill rack, and grill for 3-4 minutes or until bottoms are browned well.Turn the patties and grill until done to preference, approximately 4 minutes to medium doneness. During the last few minutes of cooking place the rolls, cut side down, onto the outer edges of the rack to toast lightly. To assemble the burgers, spread a generous portion of the avocado hummus onto the cut sides of the toasted rolls. On the roll bottom, place 2 pieces of red leaf lettuce, a patty, and top with the spicy aceto onions. Add the top rolls and serve.
