Amy’s Favorite Bleu Cheese Burger

Ingredients

1/2# Ground Sirloin
1/2# Ground Chuck
6 Chives, minced
2 Strips Bacon, Minced
1/4 Cup Bleu Cheese
1 Tbsp Creole seasoning
**For the topping**
2 Strips Bacon, Minced
1/4 Cup Sliced Mushrooms
1/2 Cup Bleu Cheese Crumbled
Lettuce
Tomato
Crusty Hamburger Bun

 

Instructions

1) In a large bowl, combine all the hamburger ingredients and combine, by hand, until all are incorporated. 2) Divide the meat, by weight, into 4 equal portions and form patties. Put on a plate and cover with plastic wrap and refrigerate until ready to cook. 3) Prepare all the ingredients for the topping while waiting to cook the burgers. 4) Heat the grill until "red hot" and cook the burgers until medium (approximately 135 to 140 degrees). Remove and rest for 5 minutes while preparing the topping. 5) Heat a saute pan on the grill and crips the minced bacon. Add the mushrooms and saute until softened. Add the bleu cheese to the pan and cook until cheese melts and a sauce is formed. 6) Place a burger in the bottom portion of the bun, followed by a generous serving of the bleu cheese topping, then the tomato, lettuce, and top bun. Serve.
