Almond-Cocoa-Ricotta Dessert Burgers with Strawberries in Grand Marnier

Ingredients

Biscuits:
6 Flaky Layers Butter Tastin’ Refrigerated Biscuits (1)
Patties and Toppings:
8 oz whole milk Ricotta Cheese (2)
1/3 cup Unsweetened Cocoa Powder (3)
1/3 cup sugar (4)
4 oz whole Almonds (5)
1 teaspoon Vanilla Extract (6)
1/3 cup plus few spoons more, if required, 10 Grain Pancake & Waffle Mix (7)
2 egg whites (8)
1pound fresh ripe Strawberries (9)
¼ cup Grand Marnier Liqueur (10)
½ cup melted sweet butter (11)
1 cup chocolate Syrup (12)

 

Instructions

Preheat a gas grill to medium-high. To make biscuits, place the biscuits on a non-stick cookie sheet. Place the sheet on the indirect side of the grill and cover the grill. Cook until golden brown, 15-20 minutes. Remove the cookie sheet from the grill and let the biscuit cool. Reduce the gas grill heat setting to low. To prepare patties, transfer Ricotta Cheese in a large bowl. Add cocoa powder, sugar and vanilla extract. Chop the whole almonds in a food processor till the become a coarse powder. Add almond powder to the bowl. Using a hand mixture, mix all the ingredients well. Add the 10 Grain Pancake & Waffle Mix and using hands, mix it to the rest of the mixture. If the mixture feels very soft, add few more spoons of 10 Grain Pancake & Waffle Mix . In a small bowl, beat the egg whites, with cleaned mixing blades, for 2-3 minutes with a hand mixer till they are firm. Fold the egg whites to the patty mixture using a rubber spatula. Do not over mix, form a large ball. Put the bowl in freezer for 10-15 minutes. Mean while slice the strawberries and transfer to a medium size glass bowl. Add Grand Marnier Liqueur, mix and transfer the bowl to the refrigerator. Remove the almond-cocoa-cheese mixture from the freezer. Divide into six parts. Each part will weigh about 3 oz. Make round patties, about 3 ¼ inch in diameter and they will be about 3/8 inch thick. Use melted butter to oil the hands, if required. Transfer each patty to 4”X4” cut up wax paper. Brush melted butter on each of them. Brush the grill rack with melted butter. Place the patties, carefully on the grill rack with melted side down. Brush top of the patties with butter. Cover the grill and let them cook for 15-20 minutes. Uncover the grill, flip the patties and brush butter again on top. Cover the grill and let them cook for 15-20 minutes. Transfer to a platter. Use six serving plates to assemble the burgers. On each plate, place the biscuit, split it in half. On the bottom half spread strawberry slices to cover the biscuit, pour about a tablespoon of Chocolate syrup. Place the patty, spread strawberry slices, add about a table spoon of chocolate syrup and top it off with top part of the biscuit. Repeat the process with other five and serve.
