Ingredients

1. 2 lbs ground chuck (80% lean)
2. salt (2 tsp)
3. pepper (1 tsp)
4. garlic, (4 cloves chopped, 2 cloves finely chopped)
5. Italian parsley (2 Tbsp chopped)
6. Oregano (1 Tbsp chopped)
7. Parmesan cheese(¾ cup shredded)
8. Romano cheese (¾ cup shredded)
9. 1 egg
10. extra virgin olive oil (2 Tbsp, season)
11. prepared tomato sauce (½ cup , 6 Tbsp)
12. fresh spinach leaves (3 cups, about 30 leaves)
13. 6 slices hard salami
14. 6 Kaiser Buns, sliced

Instructions

Patties: 2 lbs ground chuck (80% lean) 2 tsp salt 1 tsp pepper 4 cloves garlic, chopped 2 Tbsp Italian parsley, chopped 1 Tbsp Oregano, chopped ¾ cup shredded parmesan and romano cheese mix 1 egg 2 Tbsp extra virgin olive oil Stuffing: ½ cup prepared tomato sauce 2 cloves of garlic, chopped fine 3 cups uncooked spinach leaves (about 30 leaves) 6 slices hard salami ¾ cup shredded parmesan and romano cheese mix 6 Kaiser Buns, sliced extra virgin olive oil salt pepper Vegetable Oil for grill rack 6 Tbsp tomato sauce Directions: To make the patties mix the ground beef, salt, pepper, garlic, parsley, oregano, parmesan/romano cheese mix, egg, and extra virgin olive oil in a large bowl. Do not over work; knead until everything is mixed throughout. Divide into twelve portions, roll each portion into a ball, press the balls flat into thiin patties. On six of the patties each place one tsp of tomato sauce, about one half tsp chopped garlic, 5 spinach leaves, one slice of hard salami, and a Tbsp of shredded cheese. Place the other 6 patties on top of each of the topped patties. Form the two patties into one large patty by molding in your hands and having thicker edges. Do this for all six patties. Turn on grill. Brush each open face of buns with olive oil. Season with salt, pepper. Once grill is to temperature brush the grill rack with oil and place patties on grill. Cook 4-5 minutes and turn the patties, cooking an additional 4-5 minutes or until desired doneness. After patties have been flipped once place the buns cut side down on the grill until toasted. To assemble the burgers place a patty on the bottom bun topped with a tablespoon of tomato sauce, place bun on top and serve immediately. Enjoy! Makes 6 burgers. Brian, Newark, Delaware
