A Burger Named Desire

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

2 1/4 lbs. ground top sirloin
1 Large red onion
1/4 Cup Sam Adams Brown Ale
Salt & Pepper to taste
6 oz Neufchatel cheese
2 Tbs fresh basil
2 Tbs fresh rosemary
2 Tbs fresh sage
3 Roma tomatoes
6 Large, soft kaiser rolls
6 Tbs Mayonnaise
6 Leaves red tip lettuce

 

Instructions

Place ground sirloin in a medium bowl. Dice enough red onion to make 1/3 cup. Add to bowl. Slice remaining onion to make 12 rings and set aside. Pour 1/4 cup ale into bowl. Add salt and pepper to taste. Blend sirloin mixture well by hand. Set aside. (5-6 minutes)

Place 6 oz. softened cream cheese in a small bowl. Add 2 Tbs. creole mustard. Chop fresh herbs. Add to cheese mixture. Mix well. Set aside. (4 minutes)

Divide ground sirloin mixture into 6 equal balls. Form patty with one half of each ball. Spread cheese mixture evenly on each patty. Slice each roma into 6 slices. Place 3 slices of roma on top of cream cheese on each patty. Form patties with remaining balls of ground sirloin. Place each patty atop tomatoes and cheese mixture. Pinch edges together well. (8-10 minutes)

Grill burgers over medium heat 6-7 minutes per side.

While meat cooks,spread Kaiser rolls with mayonnaise. place one red tip lettuce leaf on bottom of each roll. (1 minute)

Place one burger on top of each lettuce leaf. Top each burger with 2 red onion rings. Set top of Kaiser on each burger in such a way that edge of roll touches plate and burger and onion rings are on display. (1 minute)
