2 Cheese Pesto Chicken Burgers

My husband and I enjoy grilling burgers often and were tired of the same old thing. In an attempt to "spice up" our dinner time I began to experiment with various meats and ingredients. Below is a delicious burger made with ground chicken with an extra pesto sauce for some added flavor. Enjoy.


Non-stick cooking spray for grill
1 1/2 pound ground chicken breast
1 tbsp olive oil
1/2 cup grated parmesan cheese
1/2 cup shredded sharp provolone
1/4 tsp garlic powder
1/8 tsp ground black pepper
3 tbsp chopped fresh parsley
6 ciabatta rolls
sauce - basil pesto aioli:
1/3 cup mayonnaise
1 tbsp prepared basil pesto
1 tsp lemon juice dash of hot pepper sauce


1. Spray grill with non-stick cooking spray. 2. Heat grill to a medium heat. 3. While grill is heating, mix together ingredients 2 through 8 in a large mixing bowl till well blended. 4. Shape into 6 burger patties. 5. Grill patties over medium heat for 5-6 minutes on each side. 6. While patties are grilling, mix all sauce ingredients together in a small mixing bowl till blended. Set aside for future use. 7. Using a meat thermometer ensure internal temperature of each patty is 165 degrees F. 8. When patties are done place each patty on a split ciabatta roll. 9. Dress patty with basil pesto aioli. 10. Serve with assorted condiments as desired (tomatoes, lettuce, etc.)


If time allows, these burgers are best prepared the day before and frozen till ready to use. Either way, be prepared for a delicious alternative to the backyard burger.
